In our 39th podcast, we talk to Tom from Little Earth Project, a brewery based in Suffolk that specialises in ‘historic, farmhouse and sour beers’.
We find out from Tom how the brewery came about, why he chose to take the brewery down the route he has, his brewing process, how cider has played a big part and loads more.
Sustainability is a big thing for Tom so we discuss how he has incorporated that into the brewery, as well as telling us about the hops and barley he grows himself.
Being a mixed culture fermentation brewery Tom gives us an insight into the barrel ageing process he undergoes with most of his beer, what can go right and wrong with these techniques and what he has planned for the future.
